  • Meal Planning

    Did you know that the SAD (standard American diet) only ranks 11 out of 100? This is evaluated by the % of people who are meeting the recommendations daily and sadly about 99% of Americans are not. Over half the food Americans eat is processed, lacking in proper vitamins and minerals due to the minimal fruit/veggie/whole grains intake. It is very evident why America is considered the most unhealthy country in all western countries and has a declining life expectancy. Over 1 million people die of heart disease and cancer alone yearly, which can be drastically be reduced if we re-evaluate what we are eating and how we are living.

    I love to travel and people ask me most about the food in the places we visit. We hear food from other countries is so good and it dawned on me that is because around the world people add love to the food. They spend all day gathering ingredients, baking bread, stewing tomatoes, chopping veggies, and picking the freshest fruit all to be enjoyed together over meals. The love is what is missing from the SAD (standard American diet). We are rushed out the door, too tired to cook when we return home, are looking for quick meals so buy frozen food in the stores or on-the-go snacks to keep our bellies satisfied if only for an hour. There is no love in what we are eating. When is the last time anyone made their own bread, homemade pasta sauce, or brownies (not from a box)?

    The goal here is to bring the love back. We are so disconnected from what we are eating, we don’t stop to think what is being added to the quick food, how the ingredients are fuel for disease, or how this will effect our body in an hour, let alone a year. Cooking does not need to be challenging, time consuming, or frustrating but it should bring awareness, be exciting, and change the relationship with not only how we view food but how we feel about ourselves.

    My meals are focused on being plant based(vegetarian/vegan) because I know 99% of Americans are not getting the nutrients we need from plants, are not meeting the requirements of fiber, and because a majority of us grew up eating meat so we already know how to cook it. This meal plan is designed to introduce new recipes, new ways of thinking, encourage open minds and growth.
